Ingredient: Mango

Mangoes are one of the sweetest and juiciest fruits around – sometimes so juicy and sticky that you might want to eat them in the bath, so you don’t waste any. Kids think this is hilarious!
They are known as the “king of fruits,” and they were first cultivated in India over 4,000 years ago – becoming symbols of love and prosperity. Today mangoes are enjoyed across the world for their delicious flavour and versatility.
Mango is full of vitamin C and half a mango provides an adult’s RDA of Vitamin. It is also a low histamine fruit. The bright yellow skin is because it is also bursting in Vitamin A which is important for immunity, skin health and gut health. It also contains natural folate, vitamin B6, iron, calcium, zinc and vitamin E. The fibre in the mango helps to regulate the gut.
In your kitchen, mangoes can be used in a variety of ways. We love combining mango with kefir or Greek yoghurt to make delicious lassis or ice-lollies and it pairs beautifully with lime, passionfruit, pomegranate, strawberry and blueberries, or you can spice it up with cardamom, vanilla or cinnamon.
For your savoury meals, it makes a refreshing salsa, adds an incredible brightness to salads and it is surprisingly good served alongside scrambled eggs with blueberries. For little ones, you can smoosh it up with avocado and spinach to make a delicious puree for weaning.
