Hot Smoked Salmon Lettuce Boats
These hot smoked salmon lettuce boats are super simple to assemble and fun to eat, add some fresh mango and a squeeze of lime to bring these little salad boats to life!

Hot Smoked Salmon Lettuce Boats
Ingredients
- 1 Baby Gem Lettuce
- 160 g Hot Smoked Salmon
- 1/2 Cucumber
- 4 Radishes
- 250 g Cherry tomatoes
- 1 Mango
- 1 Lime
Instructions
- Separate, wash and dry the baby gem lettuce leaves and arrange on a platter.
- Halve the cherry tomatoes, slice the radishes and cucumber, chop the mango and flake the hot smoked salmon.
- Fill each leaf boat with the prepared vegetables, top with flakes of hot-smoked salmon and pieces of mango, and squeeze over the lime.
Notes
- Serve with new potatoes dressed with melted butter and chopped fresh mint.
