Everything Red Lentil Rolls

These high-protein bread rolls made from red lentils are packed with flavour inspired by the American classic ‘Everything Bagel’. They are a fantastic accompaniment to soups and mopping up the juice from stews and they also work brilliantly cut in half and topped with your favourite savoury toppings.
Red lentils are packed with zinc and iron, and soaking them helps to release the minerals to make them more bioavailable. These little rolls are suitable for gluten-free, grain-free, dairy-free nut-free and egg-free diets.

Everything Red Lentil Rolls
Ingredients

- 270 g Red Lentils
- 45 g Psyllium (powder or husks)
- 2 tbsp Olive Oil
- 90 ml Water
- 2 tsp Sea Salt
- 2 tsp Baking Powder
- 3 tsp Apple Cider Vinegar
Everything Seasoning
- 3 tsp Sesame Seeds (white)
- 2 tsp Sesame Seeds (black)
- 1 tsp Garlic (dried granules)
- 1 tsp Onion (dried granules)
- 2 tsp Poppy Seeds
- 1 tsp Sea Salt
Instructions
- Prepare the lentils by soaking them in plenty of cold water the night before, or for at least 3 hours beforehand. Simply pour the lentils into a small bowl, cover with cold water, cover the bowl and leave to soak. Ideally stir the lentils at least once during the soaking time.
- Firstly, prepare the Everything topping by measuring all the ingredients into a small bowl and mixing well. Set aside for later.
- When you are ready to make the rolls, preheat the oven to 180oC fan (200oC conventional) and prepare a baking sheet with a non-stick liner or baking paper.
- Drain the lentils through a sieve, then pour them into a blender with the psyllium husks, olive oil, water and salt. Add the baking powder on top, then carefully pour the apple cider vinegar directly onto the baking powder to make it fizz and bubble. This will make the rolls rise and be soft and squidgy.
- Whizz the ingredients together to make a soft dough. Tip the dough into a mixing bowl and add half the Everything seasoning.
- Using wet hands, divide the dough into 8 pieces and roll into balls. Dip each ball into the remaining Everything seasoning, then place them onto the prepared baking sheet.
- Bake in the pre-heated oven for 25 minutes until golden brown and cooked through. Remove from the baking sheet and put them onto a cooling rack to cool a little before enjoying them warm.
Notes
- Sesame-free – use sunflower seeds
- These rolls are best served freshly-baked and still warm from the oven.
- Break them by hand instead of slicing them, unless you need them flat, as they are more appetising with a rough finish.
- You can buy Everything But The Bagel or Everything Bagel seasoning mix from UK-based American online stores and the Cornish Sea Salt Company.
- These can be frozen as dough balls and then baked straight from frozen.
