Ingredient: Red Lentils

Tiny orange “red” lentils are total gems in terms of nutrition. They are a brilliant and very affordable plant-based protein source and contain lots of gut-friendly fibre. They are also a great source of iron which is important for energy, immunity and brain health.
Add a couple of tablespoons of red lentils when making soups, tomato sauces, curries and bolognaise to boost up the nutrition content and to make these recipes more filling. Red lentils make a heavenly dhal too.
You can grind up red lentils up and mix them with Mediterranean herbs or turmeric and paprika to make brilliant crunchy coatings for fish fingers and chicken nuggets – turning from a salmon pink powder to a bright orange crunchy coating when cooked which makes these recipes look extra appealing.
Red lentils are also made into lentil pasta and legume rice which are a fantastic low carb and highly nutritious alternative to wheat-based pasta and rice.
