Sesame Chicken Stir Fry

This chicken stir fry with oodles of noodles has a sublime spice combination of ginger, garlic and Chinese five spice. The key to a good stir fry is an amazing sauce, and this one is truly irresistible! This chicken noodle recipe is ready in under 20 minutes and is packed with nutritious goodness and tons of flavour.
Sesame seeds make a great source of calcium and other minerals. Ginger and garlic are great for the immune system and digestive tract.

Sesame Chicken Stir Fry
Ingredients
Sauce:
- 80 ml Soya Sauce (Tamari)
- 80 ml Chicken Stock
- 3 tbsp Honey
- 3 tbsp Sesame Oil
- 1 tsp Chinese Five Spice
- 1 tsp Ginger (freshly grated)
- 1 clove Garlic (crushed)
- 2 tsp Corn Flour
Stir Fry:
- 2 breasts Chicken
- 4 Spring Onions
- 100 g Sugar Snap Peas
- 125 g Baby Corn
- 1 tsp Olive Oil
- 250 g Egg Noodles (medium)
- 1 tsp Sesame Oil
- 1 tsp Sesame Seeds (toasted)
Instructions
- Measure all the sauce ingredients into a bowl and whisk well to combine, then set aside.
- Cut the chicken into thin strips, approximately 1cm wide. Slice the spring onion into 3cm pieces, cutting diagonally. Cut the baby corn in half lengthways.
- Put a large pan of water on to boil for the noodles.
- On a high heat, heat the olive oil in a large non-stick pan or wok. Add the chicken, spring onions, sugar snaps and baby corn. Stir fry for 5 minutes. Meanwhile cook the noodles, according to pack instructions.
- Add the sauce to the pan/wok and allow to bubble for 3 minutes, until the sauce is just thickening. Meanwhile drain the noodles and toss with the sesame oil.
- Divide the noodles between serving plates/bowls and top with the stir fry. Sprinkle with sesame seeds to serve.
Notes
- Gluten-free – use rice or buckwheat soba noodles. Tamari soya sauce is naturally gluten-free.
- Egg-free – use rice noodles
- Soya-free – switch tamari to coconut aminos
- Sesame-free – switch sesame oil to olive oil or avocado oil. Switch the sesame seeds to toasted sunflower seeds.
