    Ingredient: Spring Onion

    Spring onions can add flavour and a pop of colour to almost any dish and is perfect to pep up anything from a salad to a stir fry. Also known as scallions, they are young onions which are picked before the bulb fully forms and are relatively easy to grow at home. With their milder taste, they’re an excellent way to introduce children to the world of onions without overwhelming their palates.

    Brimming with vitamin A, vitamin C and folate, they support immunity, bone health, and cell repair, while being gentle on digestion (the green part).

    Gently sauté them with some olive oil, and they create a fragrant base for risottos, soups and broths, and because they are mild, they work beautifully tossed into a green salad! They can add a fresh and gentle kick to a potato salad and are delicious in an omelette alongside crumbled feta.
