  • Slice the spring onions very finely and cut the tomatoes into thin slices.
  • Whisk together the eggs, milk, garam masala, turmeric, plus salt and black pepper to taste.
  • Add the spring onions, tomatoes, and coriander leaves.
  • Put the sourdough slices into the egg mixture to soak. Leave for a few minutes and turn to soak the other side.
  • Heat the olive oil in a frying pan, then add the sourdough slices. Make sure there are some tomatoes, spring onion and coriander leaves on top.
  • Cook for four minutes until the sourdough begins to turn golden, then carefully turn each slice over. Cook for a further four minutes, then serve.

Notes

  • You could serve this with your favourite chutney or chilli sauce on the side.
  • Gluten-free, use a gluten-free sourdough such as from The Gluten Free Bakery.
