Spiced French Toast
Enjoy this savoury Indian spiced eggy bread as a perfect light meal or snack at any time of day. The turmeric’s anti-inflammatory properties and the gut-friendly sourdough make it even healthier.

Spiced French Toast
Ingredients
- 2 Eggs
- 2 tbsp Milk
- 0.5 tsp Garam Masala (powder)
- 0.5 tsp Turmeric (powder)
- 1 Spring Onion
- 3 Tomatoes (small, cherry)
- 1 tsp Coriander (fresh leaves, chopped)
- 4 Slices Sourdough Bread (about the size in the image)
- 1 glug Olive Oil
Instructions
- Slice the spring onions very finely and cut the tomatoes into thin slices.
- Whisk together the eggs, milk, garam masala, turmeric, plus salt and black pepper to taste.
- Add the spring onions, tomatoes, and coriander leaves.
- Put the sourdough slices into the egg mixture to soak. Leave for a few minutes and turn to soak the other side.
- Heat the olive oil in a frying pan, then add the sourdough slices. Make sure there are some tomatoes, spring onion and coriander leaves on top.
- Cook for four minutes until the sourdough begins to turn golden, then carefully turn each slice over. Cook for a further four minutes, then serve.
Notes
- You could serve this with your favourite chutney or chilli sauce on the side.
- Gluten-free, use a gluten-free sourdough such as from The Gluten Free Bakery.
