Ingredient: Sugar Snap Peas

Sugar snap peas rarely make it home from the shops intact. There is usually someone helping themselves to a few straight from the bag before they ever reach the fridge. Their sweet flavour and satisfying crunch seem to win over even the most reluctant eaters.
They are one of the first real treats of the British growing season and one of the easiest vegetables to grow at home. If you have children, they will happily pick them straight from the plant and eat them there and then. Sugar snap peas provide vitamin C, alongside fibre to help keep your gut microbiome happy.
The fresher they are, the sweeter they taste. Look for bright green pods that snap cleanly when bent. They need very little preparation, although trimming the ends and removing any tough strings makes them even more enjoyable to eat.
I love adding sugar snap peas to salads for extra crunch, but they are just as good tucked into lunchboxes or stirred through a quick noodle dish. If you buy a bag for cooking, do not be surprised if a good handful disappears before supper.
