Cashew Nut Butter & Berry Apple Slices

Apple slices supercharged with nut butter, berries and seeds are such a winning snack on so many levels and are popular with all ages. This very simple recipe ticks all the boxes in terms of feeding the brain, the gut and the immune system and contains a lovely balance of carbs, healthy fat and protein for a delicious and filling snack or pudding.

It’s very easy and much cheaper to make your own nut butter, and it stores in the fridge for at least a month, so you always have some to hand to spread onto apple slices, stir into porridge or slather on to toast. Perfect to have at the ready for hungry fridge raiders!

Keep this recipe simple with a splash of coconut milk and honey or if your child loves chocolate then also add-in some cacao powder or cocoa powder which makes the nut butter seem very decadent and extra delicious.

Cashew nuts contain lots of lovely magnesium which is important for sporty kids and it also helps us to create tryptophan which helps with mood and sleep. If you use raw cacao powder, then this also contains magnesium as well as vitamin C. The omega 3 rich flax and hemp seeds are also good sources of fibre and the berries gut-friendly polyphenols that are so important to keep inflammation at bay.

Instructions
 

  • Soften the cashews by placing them into a bowl and pouring boiling water over them and leave for at least two hours.
  • Drain the cashew water and rinse the cashews with fresh water.
  • Pop the drained cashews in your blender or kitchen food processor with the coconut milk and honey – add the cacao/cocoa powder at this point too if required.
  • Slice your apples to a medium thickness (about 2-3mm). When you get to the core, turn it around and start from the other side. What’s left over in the middle is cook’s treat to nibble!
  • If you are not going to serve these immediately, then paint a little lemon juice onto both sides of the apple slices with a pastry brush so they don’t go brown.
  • Spread on the nut butter and then sprinkle on berries and seeds.
