Mediterranean Chickpea Rice Stir
This is a fabulous filling and easy rice dish, that’s not even rice at all! It goes so well with chicken, fish, seafood or tofu. Or actually just about anything else too!
The chickpea rice is from Mr Organic. You can get it here and see my review here. There are other types, but I think the chickpea one works really well with these Mediterranean Herbs, also known as Herbes de Provence.

Mediterranean Chickpea Rice Stir
Ingredients
- 250 g Chickpea Rice (Mr Organic)
- 1 glug Olive Oil
- 1 Red Onion (Small, finely chopped)
- 1 Sweet Pepper (red, finely chopped)
- 1 clove Garlic (large, finely chopped)
- 1 tbsp Mediterranean Herbs (mixed)
- 1 large handful Spinach (Roughly chopped – or kale if avoiding histamine/oxalates
- Salt & Pepper (To taste)
Instructions
- Add the chickpea rice to a saucepan of simmering water and cook for 11 minutes.
- In the meantime heat a frying pan with a glug of olive oil and fry the onion for a few minutes until soft.
- Then add the red pepper, garlic and herbs and cook again for a few minutes until soft.
- Add the chopped spinach a minute or so before serving.
- Drain and rinse the chick pea rice and mix in with the vegetables, and season.
- Serve with chicken, fish, seafood or tofu.
