    Ingredient: Parsley

    Parsley is often overlooked as just a garnish. But with its vibrant, grassy and mildly peppery flavour, this humble herb brings more than just a fresh burst of green to your plate. It’s packed with vitamin C and iron, offering support to your immune system and energy levels. Its vitamin K content supports strong bones, and its mild diuretic properties may even help flush out pesky UTI-causing bacteria.

    In the kitchen, try chopping it finely and fold it into a garlicky tabbouleh, where it mingles with juicy tomatoes, lemon, and nutty bulgur wheat. It’s the hero ingredient in a chimichurri sauce, which goes with almost any meat and scatter it generously over roasted vegetables or a steaming bowl of soup for an herby lift. Blend it with olive oil, garlic and walnuts for a quick, rustic pesto to toss through pasta or drizzle over grilled fish. Or simply mix it into a light potato salad with olive oil, Dijon mustard, and a touch of cider vinegar—perfect alongside roast chicken or salmon.
