Chocolate Chip Protein Packed Pancakes

Gooey and chocolatey, these chocolate chip spelt pancakes are a total crowd pleaser! They are packed with protein and healthy fats with so much goodness. They are an easy win to fill up hungry tummies at breakfast or tea-time.

The almond butter and the cottage cheese both add a boost of protein and calcium, and you would never know that they are hiding in the batter.

  • Weigh the spelt flour, baking powder and sea salt into a large mixing bowl, then mix to combine.
  • Put the almond butter, eggs, cottage cheese, milk, vanilla and honey into a blender and whizz until smooth. Pour this mixture into the flour and fold to combine the wet and dry ingredients. Add the chocolate chips and stir gently.
  • Heat the butter in a large frying pan, over a low-medium heat. Add scoops of batter to the pan to make 3 or 4 small pancakes. Cook for a few minutes until bubbles begin to appear on the surface. Flip the pancakes and cook for a further 2 minutes until golden brown.
  • Repeat until all the batter is used up, keeping the pancakes in a warm oven as you go.
  • Once all the pancakes are cooked, serve drizzled with a little honey.

Notes

Gluten-free – switch the spelt flour to gluten-free flour such as Shipton Mill All Purpose or Doves Farm Plain White Flour or Gluten Free Bakery Pancake Mix.
Nut-free – switch the almond butter to tahini or more cottage cheese.
Dairy-free – swap the cottage cheese for more almond butter or cashew butter and milk for plant-based milk and butter for plant-based spread or olive oil.
If you have pancakes left over, cover and store in the fridge then reheat the next day.

  1. These were delicious! The batter is very thick though is it meant to be? Certainly can’t pour it like regular pancake mix
