Chocolate & Cherry Jammy Bites
These are gooey and sweet chocolate-covered dates with a jammy cherry and almond middle. These chocolatey cherry bites make a heavenly treat that you can have stashed in your fridge or freezer when you are in need of a snack!
These delectable bites are a wholesome snack choice too. They are packed with calcium-rich chia seeds and almond butter so they should not spike your blood glucose. Chocolate & Cherry Jammy Bites
Ingredients
- 140 g Frozen Cherries
- 1 tbsp Chia Seeds
- 150 g Dark Chocolate (or your preferred cooking chocolate)
- 9 Medjool Date
- 3 tbsp Almond Butter
- 1 tsp Desiccated Coconut (optional)
Instructions
- Put the cherries and chia into a small saucepan and cook for approximately 10 minutes, until the cherries have broken down and formed a jammy texture. Set aside to cool.
- Melt the dark chocolate in a bain-marie (a bowl set over a pan of simmering water).
- Meanwhile, line a baking tray or dish with baking paper. Halve the dates and use your fingers to slightly flatten each half. Place each half date cut-side up on the prepped baking paper.
- Spoon the cherry chia jam into each of the cut dates, followed by the almond butter. Cover each date in melted chocolate, sprinkle with a touch of sea salt and finally the desiccated coconut if you like.
- Leave to set in the fridge for 20 minutes or in the freezer for 10 minutes.
Notes
- Nut-free – switch the almond butter to tahini (sesame paste) or sunflower butter.
- Dairy-free – choose a dairy-free chocolateÂ
- Soya-free – choose a chocolate from from soya lecithin
- Store in the fridge for 3-4 days and the freezer for 3 months.
