Crispy Pecan Paleo Waffles

We all adore these crunchy, nutty waffles made from pecans, eggs, honey and vanilla. They are a family favourite and I am sure you will all LOVE these pecan paleo waffles as much as us for breakfast or tea.

Most waffles are made with white refined flour, milk and sugar which can trigger an unwanted sugar rush to the brain. These amazing healthy waffles in contrast, provide nutrient dense pecan nuts and eggs to help keep your children calm and focused.

When they come out the waffle maker they can be a bit stodgy, so it is important to pop them in the oven for 5-10 minutes afterwards to crisp up.

  • Preheat your waffle maker to a medium heat and turn on your oven to 180C.
  • Melt the butter, ghee or margarine and honey in a saucepan.
  • In a food processor grind the pecan nuts into a rough ground flour.
  • Add the eggs to the pecans and blend together.
  • Add the melted butter and honey, vanilla, bicarbonate of soda and salt to the pecan mix and blend well. This should come out as a nice, thick batter.
  • Add approx 1/4 cup of batter to the waffle maker and ensure it is spread nice and evenly across the heated part. Do not overfill as the batter will just run out of the sides.
  • Cook for about a minute until the waffle is nice and brown on the outside.
  • Put the waffle in the oven on a rack to crisp up. You can keep it in there until all the waffles are ready. When you take them out of the oven they will still be a little bit soft but will crisp up as they cool.
