Ingredient: Pecan Nuts
Pecans are probably my favourite nut right now, and I am totally hooked on them! They add a natural sweetness, as well as a gorgeous rich and buttery flavour, which makes them so much more versatile than most other nuts.
Pecans are native to North America, where over 90% are grown and they are much more of a staple in the United States than here, where they are used in everything from breakfast pancakes to salads and stuffings. I am yet to meet anyone who doesn’t love a pecan pie!
Nutritionally they are full of the healthy fats that we love and are a good source of plant-based protein, as well as being a good source of dietary fibre. They provide zinc and copper for a healthy immune system and vitamin B1 which is important for blood sugar balancing . They help to keep our energy levels steady, which makes them a brilliant addition to any breakfast. Pecan nuts are a lower histamine nut and make a good swap for peanuts or cashews if you are following a low histamine diet.
One of the easiest ways to add pecans to your diet is to make a granola. Just throw a couple of handfuls of chopped pecans with oats, some maple syrup, coconut oil, and a pinch of cinnamon, and bake until it’s all golden and crunchy. Toasting your pecans will bring out their caramelly flavour, which is perfect for kids who like sweeter foods, top their porridge with them and I love sprinkling them on salads for a satisfying, nutrient filled crunch.
