Apple and Plum Roll-Ups

Fruity roll-ups are a yummy treat that kids love, and this home-made version of fruit leather makes the most of seasonal fruit with a touch of gentle cinnamon for an autumnal flavour. This recipe is a lovely way to preserve gluts of fruit, and you could try replacing the plums with any soft fruit. Either autumnal blackberries or raspberries would be delicious! Cinnamon helps to balance blood glucose levels and adds some natural sweetness.

Fruit leather is also known as pestil in Armenia and is sometimes called bastık or pastegh. It is simply dried fruit pulp.

Make a big batch as these goodies last in a jar for up to a year, but I bet they won’t last that long! Find the vegan version in the notes below.

  • Preheat the oven to the lowest setting, usually 60°C. Line two baking trays with baking parchment.
  • Wash the fruit well. Core and roughly chop the apples. De-stone and roughly chop the plums.
  • Add the fruit to a large saucepan along with the lemon juice and ground cinnamon. Bring to a simmer and cook for 30-40 minutes, until the fruit is completely cooked and very soft. Allow the fruit to cool a little.
  • Use a ladle to press the mixture through a sieve into a mixing bowl, to create a smooth puree (or use a mouli/vegetable sieve). Taste and sweeten with a little runny honey if needed.
  • Divide the puree between the prepared baking trays, spreading the mixture out with the back of a spoon to create a smooth, even layer on each tray.
  • Put the trays into the oven and allow to dehydrate for 12 hours, or until fully dried out. This can be done overnight.
  • Remove from the oven and allow to cool. Carefully peel the roll-ups away from the baking parchment, and place onto fresh new sheets. Roll up and twist the ends.
  • To serve, simply unroll and use sharp scissors to cut into strips.
  • The roll-ups will store in a cool, dark, dry place for up to a year.

Notes

  • Use frozen fruit to make these roll ups if you don’t have any fresh fruit.
  • Maple syrup works well instead of honey if you are vegan.
