A delicious sandwich that is so quick to make. It’s always good to have a tin or two of sardines in your store cupboard to make a quick lunch or picnic.
Sardines are bursting with both omega 3 which is important for brain and eye health, and calcium for strong bones and teeth. Pâté is an easy and cheap way to ensure everyone is getting enough of these two nutrients.
Ingredients
- 1 tin Sardines (drained)
- 180 g Soft Cream Cheese
- 0.5 Lemon (just the juice)
- 250 Black Pepper (a few grinds)
- 1 Little Gem Lettuce (washed and dried)
- 1 Carrot (peeled & grated)
- 8 slices Wholemeal Bread

Instructions
- Place the sardines, cream cheese, a squeeze of lemon and a few grinds of pepper into your food processor and whizz up for 30 seconds. Taste and add more lemon or pepper if needed.
- Slather two slices of bread with the sardine pâté.
- Sprinkle the grated carrot onto the pate on both pieces of bread.
- Place a lettuce leaf on one piece of bread and place the second piece of bread on this.
- Cut into quarters and serve.
