Peanut Butter Berry Pitta Breads

Stuck for back to school healthy breakfasts? Here is an easy BrainBox breakfast from NatureDoc.

These healthy peanut butter berry pitta breads only take a few seconds to put together and are totally delicious. Whole Earth crunchy peanut butter on organic wholemeal pitta (you can go for gluten free pittas instead) with yummy mixed fresh berry topping.

Blueberries are a well researched brain food. British scientists at Reading University have discovered that the antioxidants in blueberries stimulate the flow of oxygen and blood to the brain. The researchers found that concentration and memory may be boosted for up to five hours after eating one bowl of blueberries.

You can swap the peanut butter to almond butter, cashew nut butter, hazlenut butter and for those with nut allergies try sunbutter (made from sunflower seeds).

The combination of good fats and protein, with slow release carbohydrate should keep your children focused and on task all morning. There are no nasty added sugars so Jamie Oliver would approve!

This is also a great after school snack or tea time treat. You can serve them cold or you can heat up the pittas in the toaster. My youngest like to chops these pittas up into pizza slices.
