Cauliflower & Broccoli Cheese

Using ricotta as the base of a speedy cheese sauce gives this classic side-dish a boost of protein. The smooth, creamy sauce pairs perfectly with tender cauliflower and broccoli, whilst a crunchy topping brings a touch of texture.

As a bonus, this is a flourless dish. It’s a total winner that is so easy to prepare!

  • Preheat the oven to 180°C conventional or 160°C fan.
  • Cut the cauliflower and broccoli into florets. Steam for 5 minutes.
  • Meanwhile make the sauce. Put the ricotta, parmesan, milk, crushed garlic and nutmeg into a blender, along with some salt and pepper to season. Blitz to create a smooth sauce.
  • Put the steamed cauliflower and broccoli into a baking dish, pour the sauce over the top then top with the mixed seeds and extra parmesan.
  • Bake in the pre-heated oven for 25-30 minutes until bubbling.
