Watermelon, Cucumber and Lime Lollies

Cold watermelon is fantastically refreshing on a warm day but can be very messy for kids to eat!  This recipe whizzes fresh watermelon with cucumber and lime into a cooling and hydrating ice-lolly – without the sticky fingers and clothes!

This combination of watermelon, cucumber, and lime is not just scrumptious and cooling; these ingredients also help support kidney function and the urinary tract. The watermelon seeds have traditionally been used for bed wetting in some cultures. If you or your child have purple or dark ‘eye bags’ then this can indicate that the kidneys need some extra love and care.

Also, try sucking on one of these ice lollies when you have a sore throat or inflamed tonsils as they contain vitamin C.

  • Blend the chopped cucumber, lime zest and lime juice into a blender and blitz until completely smooth. Pour 1/2 to 1cm of the liquid into each ice lolly mould and then put them quickly into the freezer.
  • Put the chopped watermelon in the blender with the remaining cucumber and lime liquid, and whizz it all up until completely smooth.
  • Take the lolly moulds out of the freezer and carefully and gently pour the watermelon liquid into lolly moulds.
  • Freeze the lollies for at least 4 hours, until fully frozen. They can be stored in the freezer for up to 3 months.

Notes

  • How to cut up a watermelon: 
    Firstly, I suggest trying not to buy a huge watermelon! They are unwieldy to cut up and make life much harder. So go for the smallest you can find.
    Put your chopping board in a dish with a lip as there is likely to be plenty of juice.
    Cut the top and bottom of your watermelon off to make it stable so it won’t roll. Stand the melon up on its end and carve off the skin.
    Lie the watermelon back on its side. Cut the watermelon into slices – like a loaf of bread. You can then chop the slices into chunks to fit into your blender.
  • Some people like to remove the seeds from the watermelon before adding the watermelon to the blender. The seeds grow in patterns radiating from the centre so you can usually break it apart and scoop them out with a spoon. Watermelon seeds are good at helping relieve the pain of urinary tract infections, so keep them in if these are going to be helpful!
  • Remove the lollies from the freezer about 5 minutes before you want to eat them. If you can’t wait, just run them under a warm tap for a few seconds to release them from their moulds.
