Ingredient: Coconut Sugar
Coconut sugar looks and tastes a bit like light Muscovado sugar but it’s a little coarser in texture. It has a lovely caramel taste that works well in cakes and biscuits.
Made from the sap of the coconut palm tree, it’s thought to be one of the most sustainable sweeteners in the world, as coconut palm trees produce an average of 50-75% more sugar per acre than sugar cane and only uses a fifth of the natural resources.
Coconut sugar has a lower glycaemic index than white table sugar (35 vs 65), which helps to prevent sugar highs. It also contains small amounts of potassium, magnesium, zinc, iron, vitamin C, and B vitamins.
People who experience bloating after eating white sugar can often tolerate coconut sugar much better.
