Flourless Apple & Cinnamon Traybake

If you love the flavour of apple and cinnamon, you will simply love this traybake and it will fill your kitchen with lovely, homely smells whilst you are baking it.
I have made this simple and nourishing traybake flourless with no gluten or grains. It is packed with protein and healthy fats and is full of calcium from the almond butter. The cinnamon helps to balance your blood sugars, so this low-carb traybake makes the most wonderful breakfast, snack or pudding without experiencing the sugar highs and lows.

Flourless Apple & Cinnamon Traybake
Ingredients
- 2 Apples (ideally cooking or you can use sweet apples)
- 350 g Almond Butter (or cashew butter)
- 85 g Maple Syrup
- 3 Eggs
- 2 tsp Cinnamon (ground)
- 1 tsp Ginger (ground)
- 0.25 tsp Bicarbonate of Soda
- 0.5 tsp Sea Salt
Instructions
- Pre-heat the oven to 180°C (conventional) and line a 9 x 9 inch baking tin with greaseproof paper.
- Peel, core and roughly chop the apples. Place into a saucepan with a dash of water. Cook on a low-medium heat for approximately 8 minutes, until the apples are soft. Drain any liquid and set aside to cool a bit for 10 minutes. To cool the apple down faster, rinse the apple with some cold water.
- Put the cooled apple into a food processor with the rest of the ingredients. Blitz to create a smooth batter.
- Pour the batter into the prepared tin and bake in the pre-heated oven for 30-35 minutes.
- Allow to cool for a few minutes in the tin, then transfer to a cooling rack to cool completely.
- Cut into 12 pieces and serve!
Notes
- Nut-free – switch the nut butter to tahini (sesame paste)
- This traybake stores in a plastic bag or cake tin in the fridge for up to a week. Freeze the portions loose, and then transfer into a freezer bag. They will keep for up to 3 months in the freezer. Remove from the freezer and defrost at room temperature to serve.
