Easy Peasy Cheesy Quesadillas
A quesadilla is a warm Mexican sandwich using wraps crisped up in a frying pan. This delicious recipe incorporates smokey black beans, sweetcorn and melty cheese which makes a very moreish combination. They are easy to make, mainly using store cupboard essentials that you can grab quickly.
The cheese provides protein and calcium, while the black beans add a little extra protein and fibre. The secret is to use plenty of grated cheese, which melts beautifully and helps to hold everything together while the wraps turn warm, crisp and golden.

Easy Peasy Cheesy Quesadillas

Instructions
- Place a frying pan over a medium heat.
- Lay one wrap on your work surface and sprinkle over a quarter of the grated cheese. Scatter over half the black beans, sweetcorn, coriander and smoked paprika, followed by another quarter of the cheese. Place a second wrap on top and carefully transfer the quesadilla to the warm frying pan.
- Cook for about 3 minutes, until the cheese has melted and the underside is golden brown. Carefully flip the quesadilla over and cook for another 3 minutes, then slide it onto a chopping board.
- Repeat to make the second quesadilla with the remaining ingredients.
- Cut each quesadilla into wedges and serve straight away with a crisp salad, halved cherry tomatoes or crunchy vegetable sticks.
