Easy Chocolate Mousse
This is a three-ingredient chocolate mousse which the whole family can enjoy. It’s easy to prepare and sweet enough without any refined sugar. French children eat chocolate at breakfast time, so if this is the only way of getting eggs into your child, then offer this for breakfast and see their face light up!
Both eggs and dark chocolate are important brain foods packed with choline, magnesium and polyphenols. This is a protein-rich pudding, and it contains very low glycaemic index ingredients that won’t spike the blood sugar too much.

Easy Chocolate Mousse
Ingredients
- 120 g Dark Chocolate (dark cooking chocolate, 70% plus)
- 1 tbs Maple Syrup
- 3 Eggs
Instructions
- Break the chocolate into squares and place it into a mixing bowl set over a pan of simmering water. Allow to melt.
- Meanwhile separate the yolks from the egg whites.
- Stir the egg yolk and maple syrup into the melted chocolate and set aside to cool.
- Whisk the egg whites until they form stiff peaks.
- Using a metal spoon, gently fold approximately a third of the egg whites into the chocolate mixture. Add another third and gently fold again. Then add the final third.
- Pour the mixture into ramekins or small cups, then place into the fridge to set for around 4 hours.
Notes
- You can adjust the amount to maple syrup to suit your preference, add more if you have a sweet tooth or omit if you love very dark chocolate.
- Egg-free/vegan use 6 tablespoons of aquafaba which is the liquid from a tin of chickpeas. Whisk this up until it forms stiff peaks before folding it into the mousse. Another option is to whip up 1 tablespoon of cashew butter or tahini (sesame paste) per egg in a mini food blender for a minute, and then blend in the dark chocolate and maple syrup.Â
