Ingredient: Fennel
Fennel is flowering plant that is part of the carrot family. It is closely related to other aromatic plants like dill, parsley, and coriander. Every part of the plant is edible and has a distinctive fresh liquorice flavour – from the crisp bulb to the feathery fronds and seeds.
Fennel has a long history of culinary and medicinal use. It has been used in traditional medicine for various purposes, including to aid digestion, relieve colic in babies, and to freshen breath. Ancient Greeks and Romans believed it conveyed strength and longevity and used it as an antidote to snake bites.
It is the essential oil anethole, which gives it its distinct flavour and many of its medicinal properties. It’s an excellent source of vitamin C, potassium, and dietary fibre as well as calcium, magnesium, and iron.
