Ingredient: Peaches

Are peaches one of your favourite fruits? I look forward to peach season with glee every summer. Peaches are best eaten in the height of July and August, when they are all plump and juicy. They seem to take on the scent and taste of all that’s good about summer, even their sunset colour evokes thoughts of sunshine, holidays and the excitement that surrounds all things natural and sweet.
Not only are peaches wonderful as they are, but they can be used in cooking in a variety of ways; frozen and grated onto yoghurt, blended into smoothies, sliced into salads, in jams, in cakes, overnight oats and muffins. If you bake them, they become deeply sweet, but never sickingly so, and the flavour intensifies in such a way as to enhance the taste of both sweet or savoury dishes. For a moreish pudding, simply drizzle them with a touch of honey, scatter with nuts such as pistachios or almonds and bake, serve with crème fraiche or yoghurt, and voila!
You might be wondering if something so delicious can be good for you, and fortunately the answer is yes! Peaches are a good source of vitamins A and C, as well as potassium and fibre. They make a wonderful addition to a healthy diet and bring so much joy.
