Ingredient: Caraway Seeds
The caraway plant is a flowering herb that grows around a metre high and, like its relations fennel and parsley, produces white flowers and seeds which are actually fruit! Caraway seeds are very aromatic with a peppery aniseed flavour and have been used in herbal medicine for centuries.
The seeds have anti-inflammatory compounds known as terpinenes. Caraway is traditionally used for indigestion, bloating and flatulence, and caraway extract may help reduce IBS and IBD inflammation.
The phytooestrogens in Caraway seeds may be helpful for women in perimenopause or menopause. Caraway is also a good source of carotenoids, which are potent antioxidants that protect our cells from oxidative damage. The seeds also have an antimicrobial action in our microbiome.
Caraway can be used whole or ground and is typically used in rye bread, curries and stews. It is also delicious infused as a tea with some mint leaves.
